Easy Green Frittata

Quick, delicious, and packed full of essential vitamins and nutrients.


½ bag of Eat Smart’s Hearty Greens Blend

¼ cup of yellow onion, diced

1 Tbsp of canola oil

2 tsp of garlic, minced

½ cup of cherry tomatoes, halved

6 large eggs

½ cup of shredded cheddar cheese

1 tsp salt

1/2 tsp black pepper


Preheat oven to 350 degrees. Beat eggs in a bowl and season with salt and pepper. Set aside. Heat 9” nonstick pan over medium flame and add oil. Lightly sauté the garlic and onion together until onion is tender. Add greens and toss to combine. Add tomatoes, eggs, and cheese to the pan and distribute the mixture evenly with the greens. Remove pan from stovetop and place in the oven for approximately 8 minutes, or until frittata is golden brown on top and completely firm when the pan is shaken. Cut into wedges and serve.
