Superfood Omelet Italiano (with Broccoli Florets)

2 slices Prosciutto
1/4 C Mushrooms
1/8 C Red Peppers (or red or green bell peppers)
1/2 C Eat Smart Broccoli Florets
1/8 C Milk (any variety)
1/4 C Mozzarella Cheese
Thinly slice mushrooms and chop prosciutto and peppers into strips.
Spray a small frying pan with your favorite non-stick cooking spray and place over stove burner on medium heat.
Add all ingredients EXCEPT eggs (mushrooms, prosciutto, peppers and broccoli) to pan, and saute until tender (about 5 minutes).
While this mix is cooking, whisk eggs and milk together in a bowl.
Once veggie/meat mixture is cooked, reduce that burner heat to low/warm.
Spray non-stick cooking spray into a separate small frying pan, and place on a medium-heat burner.
Add egg mixture to pan. Once egg starts to thicken and set up all the way through, use a spatula to flip it and cook the other side.
When the other side has had a chance to cook through (1-2 min.), remove omelet from pan and place on a plate.
Sprinkle mozzarella cheese onto half of the open omelet, add the cooked veggies on top of the cheese, and fold closed. This will help melt the cheese, sealing in the delicious superfood veggies and meat mixture.
Serve on warm plate. To accomplish this, set oven to 150 degrees F, or "warm," and place plate inside while cooking. Plate will be warm/hot, so use a hot pad or oven mitt when removing from oven to serve upon.
